  • Cut the potato into small pieces.
  • Add the butter in a saucepan, add the onion, let it cook for about 4 minutes.
  • Next add the leeks, cook for 6 minutes. When you start to change the color you add the potato and let it sauté for about 5 more minutes.
  • Add boiling broth, pepper and salt, stir constantly, reduce heat and cook for 20 minutes.
  • Once cooked, pass it to a blender or chopper and add milk. Rectify the salt.
  • Once you have beaten everything and it has a good texture, you return it to the pan to boil, in that moment you remove it from the fire.
  • You can decorate with some thin slices of the green part of the leek and with some leaves of chopped fresh parsley.

  • My recommendation is to accompany this delicious cream of leeks with bread.

    It is also a good idea to grate a bit of Parmesan cheese over it and pour a splash of good extra virgin olive oil.
